Cheesy Bread

Its Sunday and I can understand that its perfectly normal if you want to have a good but easy to make evening snack. Then I have the perfect recipe for you. Its crunchy, its loaded with cheese and chicken. So lets get started.

Dish Reminder:

  • I like my cheesy bread to be crusty but you may like it to be soft. In that case wrap the bread with an aluminium foil before putting into the oven. You will know the breads have become crusty when the outer edge will be brown and the middle portion will be comparatively soft.

Cheesy Bread
Serves 2

Ingredients:
  • 1/2 of a bread loaf
  • 4 medium pieces of boneless chicken - cut into small bite size pieces
  • 1/4 tsp ginger-garlic paste
  • 1/4 of an onion - sliced
  • 1/4 of a capsicum - sliced
  • 2 cups of grated Mozzarella
  • 2-3 tbsp of Pesto sauce
  • 1 tbsp green chili paste (optional - if you want it to be spicy)
  •  sliced olives ( I did not have them. But they really add a zing to the look as well as taste)
  • 1 tbsp butter
  • salt & pepper
Method:
  • Heat butter in a pan ans sauté the chicken pieces in them with salt, pepper and ginger-garlic paste. They will release water. Cook until the water is completely evaporated and the chicken pieces are brown from both the sides.
  • Slice the bread loaf from the middle.
  • Spread some butter on the cut side of the bread and put them in the oven for 1 minute at 300F.
  • Mix the chili paste, if you are using them, with the pesto.
  • After that put them out and generously spread the pesto sauce mix over that. Put again in the oven for 2 minutes at 300F.
  • Again put them out and spread half of the grated cheese on the bread.
  • Scatter the sliced onions, capsicum and chicken pieces.
  • Cover them with the rest of the cheese.
  • Again put them in the oven and bake until the cheese is completely melted and starts bubbling and starts to become golden.
  • Put them out slice, and serve hot.
