Bacon and Egg Fried Rice

It was one of those days when my husband was caught in a meeting and was not coming home for lunch. He notified me quite early and I took a day off. I had some leftover stale rice in the fridge and some bacon. I had a book to finish and made fried rice to escape the hassles of lengthy cooking. Crispy bacon and fluffy scrambled eggs. Ivorian Chicken Stew / Poulet Kedjenou

Poulet Kedjenou, Cote d'ivoire's national dish, is basically a chicken stew. Mostly made with country chicken this chicken recipe is easy as hell. Mix everything in a pot and simmer until done. My maid showed me the process and now I make this stew pretty much very often. In West Africa, people eat this stew with rice or cassava. But it goes well with chapatti as well. In some recipes of the poulet kedjenou lots of veggies are added along with eggplant. But I don’t find the addition of eggplant amusing...so I just make it plain and simple.

Amritsari Chole

Mainly served with amritsari kulcha, amritrsari chole is a little different from the other chole recipes. It has a rather medium thick gravy and a sour and spicy taste. The chickpeas and the gravy generally have a dark colour, mainly derived from the tea or the gooseberries and has a very satisfying after taste.

Bina Moshlar Mangsho / No Spice Chicken Curry

This recipe is one of my school friend’s favourite go to recipe. Without any spices this chicken curry is perfect for her children. Zero in spices but high in taste. She varies the recipe according to the time she gets after her work, for example, boneless chicken is for easy and quick cooking, yogurt is added if she likes the dish to be more full of gravy and on some days she adds a little turmeric powder and red chilli powder to give the recipe a little kick. She sent a picture of this curry in our whatsapp group and I immediately pounced on her for the recipe.

Bengali Arhar Dal er Khichuri / Bengali Toor Dal Khichdi

Another gem from the cookbook of Prajnyasundari Devi. This book has a pretty large section dedicated towards Khichdi / khichuri only and there you will find all kinds of khichuri. From Malai Khichuri to bhuni to some odd names like Bakla Khichuri, Ogla Khichuri...and there is Til er Khichuri i.e. sesame seeds khichdi and so on. Going through those pages I found this recipe of Toor Dal khichdi or Arhar Dal er Khichuri and the best part is that it’s pure vegetarian.

Mangsher Singara / Mutton Samosa / Samosa with minced Meat

Mangsher Singara or Mutton Samosa is a luxury treat. Unlike the Sinagar that comes with a filling of potatoes or cauliflower, mutton keema samosa is not that available in the local fritter shops...rather you will find them in the menus of the small joints like Anadi Cabin, Golbari, Mitra Cafe, Basanta Cabin in Kolkata. The crust is crisp and the filling is spicy and dubiously tasty. These Keema Samosas are more like minced meat hand pies but more Indian in spices and taste. And even the crust is made with more oil than the regular dough to make them more short and crisp...which we Bengali’s call “khasta”, and the process of crumbling the flour with oil is known as “moyan”. The more “moyan” you give the crunchier and short your dough will become. And it’s mandatory to knead the dough with warm water.

Lahori Chicken Karahi

I wish I could weave stories around each and every recipe I post. But sadly that does not happen every day. I love to cook and I love to cook different dishes. So I am always in search of something new...or if that is not happening then a new twist in the old recipe does the work for me. In that process...hopping from one website to the other and going through almost three books for replicating one particular recipe...I become so engrossed that in the end I can only see the perfect dish with a perfect taste...and nothing more. For me that only matters because that defines my work...the time I spend on everything from making a recipe from scratch to pressing the publish button.

Dosa Quesadilla

The newest member of our family...our 1 month old kitten is quite a nagging one and insists on sleeping on my lap only. His mother is one free mamma...who has zero care for her child and now a days....she even runs just at the sight of him. So...barely a month old kitten is all my responsibility and just a few days ago he had a bad diarrhea. We had to take him to the vet where he was given 3 injections and some meds. He became stable from the evening and we all took a deep breath of relief.

Dudh Diye Macher Jhol / Bengali Fish Curry with Milk

I came across this particular fish curry in Sandeepa’s Blog “Bongmom’s Cookbook”. It was a new recipe but I was reluctant to try a fish curry with milk. But then I came across the same recipe in the book “ThakurBarir RannaBanna”. The book had 2 versions of the fish curry with milk, one with normal whole milk and the other with heavy cream. The heavy cream version has onions, ginger and garlic and the previous one was much simpler....and very much quite with Sandeepa’s recipe.

Coffee and Caramel Pudding

I have tried chocolate pudding. But that is too dense for my taste. For the dessert, as well as for my sweet tooth I would like to have something more light in texture. But the dense chocolate pudding is something I really don’t like. So I came up with this alternative...Coffee and Caramel pudding. It has a strong flavour from the instant espresso powder and a striking smell and buttery taste from the caramel sauce. It just can’t get any better. Trust me.

Ginger Chicken Curry / Murgh Adraki

It just seems quite plausible that since there is a garlic chicken curry...there will also be a  ginger chicken curry. Ginger chicken curry comes with a fresh fragrance of ginger and is so light is texture and flavour. The recipe is more or less same but the addition of thin julienned ginger comes as the magic spell of the fairy godmother and uplifts that age old curry to a completely new one. Its not the old wine in a new bottle...while we can all agree that old vintage wines taste the best...but for this we can say that this is the old wine with a new twist in a new bottle. 
Apart from flavouring the curries, ginger is beneficial for health in many ways and if taken regularly it can help in reducing the pain from some common chronic health problems.
