Classic Tiramisu

The classic never goes out of fashion. Now with every issue of any food magazine you will get a version of their tiramisu. A little tweaked here...something added there...and you get a whole new Tiramisu avatar!! But I am an old fashioned person. In today’s time of digitization I still crave for hardcover books, like to cook detailed elaborated traditional recipes...still I crave for movies of Uttam-Suchitra. So quite naturally I like the traditional Tiramisu more than the recent ones with various flavours. And since I had some Marsala wine in hand...the flavour turned out to be just wonderful!!!

Lobia Curry with Coconut Milk

I made the lobia curry with coconut milk this time. It was just a erratic decision since I had this can of coconut milk sitting in the kitchen counter for like ages...and it turned the curry completely different in taste. The coconut milk gave the curry a lovely beautiful creamy texture which I absolutely loved.

Bhoger Khichuri / Bhaja Muger Khichuri

I wait all the year for this Bhoger Khichuri. Earlier Ma used to make this on Nabami...and now I make this during the Durga Puja. Bhoger Khichuri is nothing but a simple mish-mash of rice and dry roasted nutty aromatic yellow split lentils with a little sprinkle of turmeric powder and red chilli powder and finished off with our very own garam masala powder. And since we are by birth dedicated potato lovers...and had forgotten that this staple veggi is not at all native...dunk the khichri with nice and beautiful peeled, halved and fried starchy potatoes, cauliflowers and green peas as well. And as if...we are still not satisfied...we bring out the papad from the corner of the cupboard (as khichdi is the only time...we recall that there exist something like papad), then fry it knee deep oil or just place on flame to get some nice chars, and the chutney...pineapple or tomato, seriously anything will do...since a hint of sweetness can never do any harm and some sudh desi forever pure forever Bengali “Gawa Ghee” to drizzle on top of that yellow mess...oh....are you salivating now?? Then hop onto the recipe right away!!!

Easy One Pot Chole Masala

My maid is a terrible cook so even if I am not feeling well...I try to cook as much as possible. The magic of this chole masala is in its slow pressure cooking. And also pressure cooking assures that you will have perfectly cooked chickpeas in the end. So...just whizz...away!!!

Pizza Sauce

 If you love homemade pizzas then you must always need a good pizza sauce. Pizza sauces can be downright simple with just the flavour and seasonings from garlic and pepper and overly complicated with different spices, herbs and wine and so on. In my pizza sauce I have used anchovy fillets, which I read in  many placed gives a pack of flavours and caraway seeds for that intense earthy note. In my opinion if pizza sauce becomes overly intense in flavours it kind of messes the tastes of the toppings.
